Chicken Salad Recipe

This recipe was in our local newspaper last week. I made it for a ladies lunch on Wednesday. It was very, very good! I was going to take a picture of my croissant with the salad today at lunch but I forgot and ate it all gone before I remembered! It was delicious!

Four Chicks’ Chicken Salad

2 cups cooked chicken (your own or rotisserie)
½ cup dried cranberries
Butter for sautéing
¼ cup sliced almonds
¾ cup mayonnaise
¼ cup golden raisins
¼ cup diced celery
2 tablespoons diced red onion
Salt and pepper to taste (about ¼ teaspoon each)

Chop cooked chicken to yield 2 cups.

Soak cranberries in just enough hot tap water to cover for about 15 minutes to plump them; drain and dry on paper towel. (Don’t skip this step or the cranberries will draw the moisture out of the mayonnaise and salad will be dry.)

In a small skillet, melt a little butter, toast the sliced almonds. Gently mix chicken and mayonnaise then fold in other ingredients.

Oh Yum! This must have been the recipe you were telling me about last week! I will have to give it a try - I am a sucker for Chicken salad!

There was a recipe in Taste of Home I have been wanting to make. It has swiss cheese in it, it sounds delicious I just haven't got around to it...if only I would have made it to put in the cookbook. I did put that oatmeal recipe in there even though I've never made it....hopefully it's good!!
